is it ok to feed a cat things that we make at home?(that we eat)

Umm well not really as the food we eat may not be balanced for a cats digestive system and nutritional requirements. It is important that they get the right balance of nutrition.
However you can make home made cat food for your cat, I have a downloadable ebook about home-made cat recipes on the site here

I just leave dry food out all the time and give them canned everyone so often. Mine do not overeat, none of them are fat and I like them being able to eat when they want.
