how do i get the black stuff off of my kittens nose without it trying to bite or scratch me?

You have not said what black stuff. It is difficult to advise without knowing what the black stuff is.

If it is just a little dirt then i wouldn't worry, the kitten will get it off. If its tar then all you can do is to cover it with some talcum powder and then dry and brush it off. You will snot be able to get all of it off, it will gradually wear away over time as the fur is replaced.

As for how to do this without getting scratched , you have to wrap your kitten tightly in a towel to stop them being able to move around. Tuck him under your arm while you clean his nose.
